Pedro Ximénez's unique character is owed to the dual process of "asoleado" followed by long ageing in oak barrels.

A rich dark mahoghany coloured sherry it boasts a varied bouquet of dates, dried figs, honey, and hints of cocoa, coffee and tiramisú. Rich and creamy on the palate with balanced acidity and a lingering roasted finish.

Perfect as a dessert by itself, or as an accompaniment to ice-cream, chocolate, acídic or citrus desserts and blue cheese. Serve cold between 11° and 13° C.
