Oloroso

Oloroso is the result of a single type of ageing, oxidative. Time concentrates its properties and its evolution into a singular, highly structured wine.
A brilliant, dark amber coloured sherry, with a warm bouquet of nuts, roasted scents, spices and balsalms, hints of tobacco and leather. Well rounded and velvety on the palate, it has a lingering taste with complex retronasal aromas of noble woods.
Ideal with red meat, game, and especially gelatinous meat such as oxtail and pork cheek, it is equally delicious with mushrooms or very mature cheese. Serve cold between 12° and 14° C.
